EGGQUINOX

An ancient tradition in the Urban family was to balance eggs on equinox. An equinox occurs twice a year when the earth’s axis is neither inclined away nor towards the sun. If the eggs could balance on those two special days during the year when night and day are balanced evenly then more Urbans would be born to carry on the family ways and traditions. Around March 21 and September 22 or 23rd every year. Yin and Yang are in sync. Heart balances mind. Body balances spirit. Demons are kept at bay. Life is good, rich and full.

Easy Quiche

3 eggs
1/2 cup butter or margarine
1/2 cup Bisquick mix
1 1/2 cup milk
Dash of salt and pepper
1 cup chopped ham
1 cup sliced mushrooms
1 cup shredded cheddar cheese
1 tsp. dried minced onion

Mix egg, margarine, bisquick, milk, salt and pepper in a blender on low speed until mixed well (30 to 45 seconds otta do it). Pour blended mix in medium mix bowl, add remaining ingredients, stir. Pour into 9-inch greased pie pan. Bake at 350 F for 40 minutes. Remove. Let stand 10-minutes.

DEVIL’D EGGS

Fun for entertaining. Hard-boiled eggs are nice to have on hand when you’re in a rush too — just peel off the shell, rinse and add a dash of salt or Mrs. Dash with a little mayonnaise, onion or cellery to make an egg sandwich. Draw a little happy face on your hard-boiled egg while you keep them in the fridge (that way you can tell the difference between the ones that aren’t cooked and the hard boiled ones).

6 hard boiled eggs
1 tsp mustard
2 Tbsp. ayonnaise
1/2 tsp worchestshire sauce
1 tsp finely chopped onion
salt and pepper to taste
paprika

Cut each hard boiled egg in half, remove the yolks and place in a bowl. Mix the remaining ingredients with the yolks and pile the mixture back into the hollows of the hard boiled egg whites.

Dust lightly with paprika before serving.

TIP – center the yolks in the hard boiled eggs by rolling the egg in one direction several times before boiling it.
